Old Fashioned Chicken and Dumplings
My grandmother made chicken and dumplings when I was a child. This recipe tastes like I remember her chicken and dumplings tasting. I love the pepper taste. |

Yield: 6-8 servings
Ingredients for Chicken:
- 1(2½ - 3 pound) chicken
- 2 quarts water
- 2 tsp salt
- 1/2 tsp pepper
Directions:
- Combine chicken, water and salt in large pot
- Bring to a boil; cover and reduce heat and simmer 1 hour or until tender
- Remove chicken from broth and cool.
- Leave broth in the pan. Add pepper
- Bone chicken and cut meat into bite size pieces
Ingredients for Dumplings:
- 2 cups all-purposed flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 TBSP shortening
- 3/4 cup buttermilk
Directions for Dumplings:
- Combine flour, soda and salt
- Cut in shortening until mixture resembles coarse meal
- Add buttermillik and stir with a fork until dry infredients are moistened
- Turn dough onto a well-floured surface and knead lightly 4 or 5 times
- Bring chicken broth to a boil
- Pat dough into 1/2 inch thickness
- Pinch off dough in 1½ pieces and drop into boiling broth
- Reduce heat to meduim-low and cook about 8 - 10 minutes, stiring occasionally
- Stir in chicken
NOTE: This made a very large amount. I think that next time I make it, I will only make 1/2 recipe of the dumplings so there is more gravy.
